...hs to a year with a view to possibly buying a 2 bed flat over there.  My husband and I are a young at heart couple in our mid fifties.

One of our main concerns however is what is life like during the winter months. We would be very grateful for any advise from anybody who is living over there. 😊

You may not live in Spain for more than 90 days out of 180 days a year. This is a Brexit Rule. You would probably need to apply for a Non-lucrative Visa and then start your Residence process. See link below for further reading  before you make any decisions.
