Hi, we have a taxi booked back to airport, to collect us from Constitucion Plaza this Friday, 7am DURING FIESTA DAYS. Will the taxi be able to access the Plaza road to collect us?

The roads are closed at the moment, but not sure about Friday. You would be safer arranging the pickup somewhere else with car access anyway, because even if access is officially granted on Friday, it might still be closed, as no one will have removed the bollards.
Perhaps get picked up from Plaza De La Concordia. Which is about a 10min walk from the main square. Or, head in the other direction and get picked up at the police station, which is only a few mins walk.
