My husband holds an Irish Passport I do not. If my husband wants to holiday in Spain for more than
90 days can I stay also. I must add we own a Holiday home here.

Your passport will be stamped for a 90/180 day stay, 'when you enter anywhere into the Schengen area' (Which includes Spain)
Family members of Union citizens who wish to remain in Spain beyond 90 days must submit an application with the competent authorities for a residence card as Union citizen family member. (Then you can stay longer with your husband)

If a non-resident does this, will they become resident and liable to pay Spanish tax?

Hi there
if you have lived in Ireland with your husband for 3 years, you can apply for Irish citizenship and get a passport too! My friend did this. She can now stay in France/Spain for as long as she likes!!
