I suggest you suss out a couple before the big night, go and look at their menus, see what they look like. A couple?  Well, three or four actually!  You can see what you think of them, and ask if they'll be open on NYE.

Firstly in the marina, the friendly La Pappardella. Lovely staff there. If you are staying in that area and would prefer something in the port, you can also try Rosatti.

Then going up a notch, a charming, elegant place in the Old Town, La Tarantella in the Calle Santa Ana, sort of behind the Plaza de las Flores. Gorgeous. 

Then in the pedestrian Calle Real, the ever-popular El Rincón Toscano. In the parallel Calle Caridad you'll find a great pizza restaurant,  L'Antico Forno.

So several choices there, you'll just need to check which one looks best and see if they'll be open.
